Creamy Tomato Soup

I was craving tomato soup and grilled cheese one night and needed a quick simple meal for two hungry kids. But, when I looked in my pantry, I didnt have any canned soup. So I decided to make some from scratch.  It was so easy and very delicious. I found a couple recipes and combined them to get this one:

Creamy Tomato Soup
2 T butter
2 T olive oil
1 chopped onion
1 t chopped garlic
2 T flour
1 28 oz can crushed tomatoes
3 cups chicken broth
1 1/2 t sugar
1/2 cup half and half
salt and pepper to taste

In a Dutch oven heat oil and melt butter. Add chopped onion and garlic. Cook for about 5 minutes. Add the flour to coat the onion and garlic. Then add the tomatoes (including juice), chicken broth, sugar, salt and pepper. Cook for about 45 minutes. Stirring so it doesn’t stick to bottom of pan. Let cool somewhat and then in 3 batches, transfer to blender and pulse a few times. This will break up the tomatoes and onion a bit. We like to make grilled cheese on the panini maker and dip them in our soup. So yummy!
